Here are a few more samples of what is to come. Oh how the holidays put holds and delays on all non-yuletide plans! Alas. But I am particularly excited about these new creations and they will definitely have a place on the new menu:

And the latest in Tart Territory (ooh, sounds like a province in Candy Land, doesn't it?) are

The former, pictured above is divine: caramel mousse inside a sweet and buttery tart shell supports plump, juicy blackberries. The later (pomegranate & ginger) is scheduled to appear soon, so let your mouth water over this one, and be sure to check back for the up and coming!

A New Taste

As some of you know, I am in the process of launching a new catering business, which, to be perfectly honest, is equal parts yikes and exhilaration. Though still in the prepping phase, I'm excited to share a little of what is to come with all of you.

Pecan Cake w/ Spiced Pumpkin Mousse & Pecan Praline

Lisa wanted a rustic look for her annual Great Pumpkin Dinner, so we let the buttercream spill out just a bit from each layer, topped it with a rosette of mousse and buttercream, and gave it some sparkle with a bit of pecan praline.

This is Melese's cake- a four-tiered variation in brown. She wanted every layer to look and taste different, so we pressed coconut, sliced almonds, and crushed gingersnaps into the outside of each layer instead of traditional buttercream or fondant, and let the flourless chocolate-hazlenut cake stand on its own. Guests loved the choices and most opted to sample a bit of each.
